About
Dot Architecture draws its inspiration from historic flour mills, where stone and wood came together to form places of production that were robust, simple, and noble. The project is rooted in the history of the site, formerly a bank, whose forms and materials guided the design process. This dual reading, between the spirit of the place and the memory of the mills, shaped the concept: to create a space where heritage and modernity meet in a harmonious dialogue.The new Louise Bakery location thus becomes a tribute to materiality, craftsmanship, and the act of making. It brings together the warmth of wood, the mineral texture of stone, and the rigor of metal in an architectural composition that is both grounded and timeless. The overall design is welcoming, elegant, and durable, a contemporary reinterpretation of traditional materials and the institutional solidity of the existing building.

Atmosphere and sensory experience

The space opens into a bright and welcoming atmosphere, designed to evoke indulgence and conviviality. Colors, textures, and materials subtly recall the house’s products, golden pastries, pale flour, creamy coffee.

Every detail is intended to create a calming, sensory environment, inviting visitors to slow down, observe, and savor the experience.

The central monolith, symbolic and functional heart

The monolith stands at the center of the design, solid and sculptural, evoking the millstones of traditional flour mills. This foundational volume symbolizes the continuity of craftsmanship: both a base and an anchor point, it houses the product displays and now integrates the coffee area, conceived as a place of gathering and human warmth.

The raw materiality of the monolith engages in dialogue with the refined finishes surrounding it, establishing a balanced interplay between tradition and modernity.

Finishes and materials

The walls are wrapped to mid-height in wood paneling, creating a sense of comfort and protection. Above, a café-cream lime plaster softens the light and purifies the atmosphere. Beyond aesthetics, the use of natural materials contributes to indoor air quality and user well-being, reinforcing the healthy and calming character of the space.

Terracotta pendant lights suspended above the tasting areas add warmth and authenticity. Their earthy tones harmonize with the wood and creamy plaster, forming a cohesive and welcoming palette. This sensory continuity extends to the restrooms, clad in café-colored ceramic.

From the counter to the washrooms, every space speaks a shared architectural language, defined by material continuity and carefully balanced proportions.

The Visitor Experience

From the moment one enters, the gaze is drawn to the main counter, bathed in light. The spatial scenography instinctively guides visitors toward the heart of the experience, where conviviality meets sensory pleasure.

The textured, mineral counter occupies a central position, clearly articulating the zones of preparation and consumption. Nearby, self-service displays immerse visitors in the bakery’s universe, while the omnipresence of wood envelops the space in a familiar warmth.

The main counter embodies the spirit of Boulangeries Louise, advice, warmth, and proximity. It becomes the pivot of the space: a stage for human exchange and a showcase of artisanal know-how.

Spaces of Gathering and Sharing

At the core of the store, shared areas form a beating heart. Their strategic placement encourages encounters and conviviality, transforming each visit into a lively, communal experience.

The seating areas invite relaxation. Ergonomic furniture, natural materials, and softened lighting create an atmosphere conducive to conversation and the simple pleasure of enjoying a coffee or pastry—true sensory pauses imbued with warmth and humanity.

Tables looking out, onto the neighborhood, the church, and Centre Street, establishing a visual connection between inside and outside, between the intimacy of the space and the rhythm of the city.

Transparency, Structure, and Identity

Between counter and workshop, transparency prevails. The boundaries between production, display, and seating dissolve, revealing the process behind each product and fostering curiosity, understanding, and a sense of belonging.

Anchored to the main counter, the café and communal table act as a new symbolic center of the space echoing the former bank vault. A place of ritual and exchange, it embodies the bakery’s renewed identity: generous, accessible, and deeply human.

Spatial organization is both clear and evocative. Architectural grids, alignments, and signage guide visitors intuitively through the space, from preparation to seating, ensuring a fluid and legible experience.
This discreet structural order reinforces harmony and elevates the overall quality of the visit.

This new bakery concept embodies a fusion between heritage and contemporaneity.

Every detail, from the choice of materials to the composition of spaces, reflects a desire to elevate the everyday experience: transforming a place of passage into a place of life, where people come as much to savor as to gather.

The result is an atmosphere that is both familiar and distinctive, where heritage finds its place within modernity.
